In 1997 Infinity Bakery opened as Sydney’s first organic sourdough bakery. It all started when Australian chef Phillip Searle, inspired by a classic Parisian bakery, brought the ancient craft of ‘Levain’ baking traditions back to Darlinghurst. He was one of the first to teach customers about the benefits of good bread.
Now under the guidance of childhood friends, William Petersen and Nick Wokes, Infinity Bakery has recharged its heritage with fresh new energy. Today it’s about ensuring they live up to that philosophy – make good bread and educating people about it.

Just like ONA, we believe that coffee is more than just a drink. Which is why they we chose them to supply our coffee. As Canberra’s largest specialty roaster and supplier, ONA live by one simple goal: creating the best and most sustainable coffee in the world. Via the ethical trading company, Project Origin, ONA source the highest quality green beans produced in the most sustainable ways possible, deal directly with producers and empower communities in Ethiopia, Colombia, Honduras, El Salvador, Panama, Nicaragua and India, among others.

Serious milk, for serious coffee! We use Australian specialty coffee brand MILKLAB. The award winning barista milk range for espresso based coffee, was designed by coffee professionals around the world to texture and stretch with any coffee type. The MILKLAB range of products, includes milks made from SOY, ALMOND, MACADAMIA , FULL CREAM and LACTOSE-FREE dairy milk and are being heralded for their capacity to hold form under the wand. The range also includes Australia’s first locally produced COCONUT MILK for coffee.
